4/23 Blog #4 Eathiopia

This weeks recipe was called Doro Wot, a chicken dish hailing from the East African country of Ethiopia. There is actually a sizeable Ethiopian Jewish population in Israel and Ethiopia, a fact most would be surprised by. Chicken is also a Jewish staple food. So needless to say, I was very excited to see how this poultry would be utilized in this specific subsection of Jewish cuisine. To make this dish you will need a good amount of time, as this took me nearly three hours to do on Sunday night. It is so well worth it though. This chicken was rich and filling and was packed with flavor. Cooking the chicken, onions and eggs all together, low and slow, really allowed a lot of flavor to penetrate the chicken. By the time the chicken was odne, it was nearly falling off the bone it was so tender. To eat it, I served the chicken with fried, bread pankcakes called Lachuch- a word I still don't know how to pronounce. The flavors of the chicken fit perfectly with the yeasty sweetness of the pancakes and using the pancakes as utensils is honestly the highest level of advancement humans have achieved. This recipe was also from the Shuk book, a pruchase i believe everyone should get, as I haven't had bad food from it yet. This recipe was not easy though. It wasn't very technical but being able to pull of the timing to do something like that was hard. I had to make sure everything was ready at around the same time, and that nothing was over or undercooked, something that is hard to do when you are making multiple things at once. Also, shallow frying was a little scary as I didn't want to get burned by the hot oil. Figuring out how to perfectly cook a lachuch was also something that was quite hard about this dish. I experimented with different sizes, heats and times to try and get a perfect one. I found that larger ones were easier to control and it took longer for them to cook. Finding a way to make them both large and thin would've been ideal, but that eluded me this time. Overall, this was a very enjoyable meal, and made the most food out of any recipe I've made. 1000000/10, would eat again.

  2. I've actually been to an Ethiopian restaurant before, and I remember Lachuch being delicious, but I have not been able to try more dishes. Looks delicious though!
